This soup is dairy free, and can easily be made gluten-free if prepared with gluten-free noodles and served with toasted slices of your favorite gluten free bread. I find that rice noodles are the best match for this recipe.
Ingredients for Herbalicious Chicken Soup
5 chicken drumsticks with the skin on
1 1/2 tsp sea salt
12 cups of water
2 tbsp. olive oil
2 tsp chopped garlic
1 cup diced celery
1 cup sliced carrots
1/2 tsp ground black pepper
1/2 cup chopped fresh parsley
1/2 cup chopped fresh dill
4 servings cooked rice pasta or regular wheat pasta, preferably a small cut noodle such as elbows, orzo, acini di pepe, stellini, or tubetti
How to make Herbalicious Chicken Soup
Add the drumsticks, 1 tsp of sea salt, and the water to a soup pot. Bring to a boil, then reduce and cook at a low boil for an hour or until it has reduced by a third. Then, remove the chicken. Discard the skin, bones and cartilage. Pull the meat into shreds. Pour the broth into a heat-safe jug or container. Set the meat and broth aside for later.
Add the olive oil, garlic, celery, carrots, 1/2 tsp sea salt, and black pepper to the pot and cook on medium heat until the vegetables are fragrant and translucent. This will take about 10 - 12 minutes. Add the shredded chicken, parsley, and dill, and stir well. Pour in the broth that you made earlier and mix well. Simmer on medium heat for 30 minutes. Add the pasta, cooked separately.
Serve with slices of your favorite bread, toasted until crispy.
